Grilled Peach Salad

This has got to be in my Top 3 Summer Salads ever. The sweetness of the peach combined with the arugula and the goat cheese tastes honestly incredible. Put some roasted pine nuts on top and you just made yourself a beautiful, tasty salad! This recipe serves 2 or 4 as a side dish.

You will need:

2 soft peaches

1-2 tablespoon olive oil

pinch of salt

2 cups arugula

3 tablespoons roasted pine nuts

½ cup or 100g goat cheese


  1. Slice the peaches into 8 segments per peach. Heat your grill pan to medium high heat and brush it with the olive oil. Place the peach slices in the pan and cook each side for 2-3 minutes or until the peaches show grill marks.
  2. Set the peaches aside and allow them to cool them a bit.
  3. Wash and dry the arugula and toss it in a little bit of olive oil and a few pinches of salt. Assemble the arugula on a plate and top with the peaches, goat cheese and the pine nuts.
